Preserving the vegetables in oil is an art. It is important to know the secrets to keep them crunchy and tasty. To prepare our Artichokes in oil, we choose only fully ripened artichokes and preserve them in sunflower seed oil to keep unaltered the real flavour of this vegetable.

ARTICHOKES IN SUNFLOWER OIL - INGREDIENTS:
Artichokes 58%, sunflower oil, salt, wine vinegar, acidifier: citric acid; antioxidant: ascorbic acid.  After opening, keep refrigerated. GLUTEN-FREE.

USEFUL TIPS
The crunchiness and the natural flavour of our artichokes, given by preserving them in oil, makes our product suitable for many different quick and tasty uses, such as appetizers, side-dishes and hot recipes. This side-dish has always been traditionally combined with typical Emilian cold cuts. Drain the artichokes from their oil for a few minutes. Grill them and add a pinch of salt and you will obtain a tasty side-dish for grilled meat and fish. Otherwise, you can sauté them in a pan with a little bit of extra virgin olive oil. Add salt and a sprig of rosemary and other aromatic herbs to taste. Serve them as a side-dish or a starter, covered with some Parmesan shavings.

The Onion Jam from La Dispensa di Amerigo is made with red onions typical of the Bologna area. We only add sugar and Marsala wine. It is an intensely flavoured, sweet-and-sour jam, thanks to the red onions that enhance its sweetness.

Red onions 66,7%, sugar, apples, lemons, doc marsala wine. After opening, keep refrigerated.

USEFUL TIPS
La Dispensa di Amerigo Onion Jam is perfect with mature or blue cheeses, as its sweetness balances their strong taste. It is also delicious on a slice of toasted brioche. Spread plenty of jam over the brioche, and serve with a generous slice of Dispensa di Amerigo liver pâté. You can also use our Onion Jam for quick and tasty hors d’oeuvres. Finally, it is ideal with all kinds of roast meat and game.

We have put two of the highest quality products of our area into a jar: Borettane onions and Balsamic Vinegar of Modena PGI. This type of onion is very well-known for its unmistakable taste. Fragrant, sweet and crunchy, our pickled onions in Balsamic Vinegar of Modena have a soft flavour and an intense aroma, ideal as an appetizer or as a side-dish.

USEFUL TIPS
This side-dish has always been traditionally combined with typical Emilian cold cuts. You can also slice the onions and serve them with beef or boiled poultry, adding a little bit of Italian extra virgin olive oil. Otherwise, you can serve them with canned fish, like sardines or tuna, possibly further enhancing this combination with seasonal cooked or raw vegetables.
