Use our red deer venison ragù to make a two-portion lasagne. Butter a baking dish and sprinkle over some breadcrumbs. Pour a spoonful of béchamel sauce over the base of breadcrumbs to prevent the dish becoming hard and dry during cooking. Make four layers of fresh egg pasta, plenty of béchamel, meat sauce and some grated Parmesan cheese. Add some more béchamel and Parmigiano-Reggiano on top. Cook in a fan oven at 180° for half an hour. Tip: during cooking the flavour of the lasagne tends to become concentrated, so go easy with the salt!
